Hot Dish Casserole

Merry post-Christmas and pre-New Years!

I'm not going to lie - it's been a while since I posted any of my grandma's recipes.  In my defence I have sold my home and moved after doing extensive renovations so I've been a bit busy! In getting ready for Christmas the budget always runs a bit low in buying all kinds of presents (not only Christmas but I know a lot of people with birthdays in December!).  I turned to my grandma's cookbooks to find something easy and cheap and filling.  This recipe for Hot Dish Casserole fit that to a tee. It's very retro.  And by 'retro' I mean there is canned soup and no fresh veggies... or spices... or herbs.  However it is very easy and filling and has that 'comfort food' feeling to it.


Hot Dish Casserole (it is the second recipe on this page and listed as 'good' by grandma)




  • 1 lb ground beef
  • 1 package frozen mixed vegetables (I used half a bag of pea, carrot, corn and green bean mix)
  • 1 can chicken rice soup
  • 1 can mushroom soup (I used cream of mushroom soup because I just assumed that's what it meant!)
  • 1 - 3oz can chow mein noodles (I used half a 170g bag of Farkay chow mein noodles)



  1. In electric skillet add ground beef - salt and pepper.  Brown. 
  2. Mix 2 soups (no water) together and heat a little on element.
  3. Into casserole add noodles and 1 package frozen mixed vegetables and mix a little.
  4. Add meat and mix.
  5. Add soup poured over mixture.
  6. Oven 350 degrees for 1 hour.
  7. If you wish 1 package frozen french fried onions or grated cheese on top.
